Last weekend we celebrated my dearest granny’s 75th birthday. We had a huge family get together and since my gran loves her sweet treats, I baked a vegan hot chocolate fudge cake for the occasion. She isn’t vegan but since I am, my cake was. And oh my goodness, it was delicious. It was rich, fudgy and a real treat. Everyone who tasted it told me you’d never know it was vegan.

I’ve been thinking about making this cake again ever since. But the trouble is, me and chocolate cake have kind of a love-hate relationship. And by that, I mean I love it so much but hate my lack of self-control when I’m around it. Without the whole family being around to help me eat it up, I knew that baking another big chocolate fudge cake would result in me eating it all to myself. And let’s face it, that isn’t as good of an idea as it sounds (speaking from experience).

My solution? A mini, one-serving version. I present to you: A vegan hot chocolate fudge cake recipe for one. Hallelujah, praise the chocolate gods.

vegan gooey chocolate cake

To make the chocolate fudge cake, I took the chocolate cake recipe that I’ve been using for years and simply divided the ingredients to make it one serving. The ingredients are super simple which makes this recipe very easy to make.

For the hot chocolate sauce, I used a little trick that I learned at high school during a home economics exam: Take some cocoa powder and some sugar and mix them together with boiling water. Then just pour that mixture over the cake batter before you bake it. The result? A warm, gooey, pudding-y sauce that’s hidden in the centre of the cake. Incredible.

This recipe can easily be doubled if you’ve got a friend/partner to share with, or if you just fancy having a bit more to yourself. And it’s best served warm with a little bit of ice-cream.

I just know you’re going to love this vegan hot chocolate fudge cake! Please leave me a comment to let me know if you decide to make it!

Happy baking!
