Vegan Coffee  Walnut Cake

This vegan coffee and walnut cake is a flavourful sheet cake topped with a rich, decadent, dairy-free cream cheese frosting.

Step 1:

Mix 2 tbsp of instant coffee with 3 tbsp of boiling water and leave it to cool completely.

Step 2:

Mix self-raising flour, caster sugar and baking soda together in a large bowl.

Step 3:

Add soy milk, cooled coffee, oil, vanilla extract and vinegar. Mix to make a smooth batter.

Stir in chopped walnuts.

Pour into an 8x10-inch lined tin and spread out evenly.

Bake for 25 minutes at 180°C.
