These vegan mince pies make the perfect Christmas snack. Mini dairy-free shortcrust pastry pies filled with sweetly spiced fruity mincemeat.

Step 1:

Prepare the homemade  fruit mincemeat.

Step 2:

Make pie dough with plain flour, margarine, icing sugar and water.

Step 3:

Roll dough to 3mm thick and cut out twelve 3.5-inch circles.

Step 4:

Place the circles of dough into a cupcake tin.

Step 5:

Fill with homemade mincemeat. Cut out stars from the remaining dough and place on top.

Step 6:

Bake at 180°C 25 minutes until the filling is bubbling.
