This vegan almond biscotti is sweet, crunchy, and perfect for dunking into hot chocolate, tea or coffee. Enjoy these classic Italian cookies without the eggs or dairy!

Step 1:

Mix vegan butter, sugar, almond extract, vanilla extract and soy milk together in a bowl.

Step 2:

Add plain flour and baking powder to the bowl. Mix then press together into a ball of dough.

Press chopped almonds into the dough. Shape dough into two logs.

Bake at 180°C for 30 mins then cool for 20 mins.

Cut the logs into 1-inch slices.
