My inspiration for these vegan toffee apple donuts
Toffee apples- a Halloween classic. They instantly take me back to my childhood. A childhood filled with spooky Halloween parties. A childhood of reading Meg and Mog books and watching Hocus Pocus over and over on VHS. And a childhood where I’d go door-to-door, dressed in a witch costume (a black bag tied round my waist + a plastic hat with green hair glued to it- scary!) and ask strangers for free candy. As worrying as that must’ve been for my poor mother, my friends and I LIVED for trick-or-treating on Halloween. I remember being so keen that we tried (and failed) to do it in September one year. I don’t even think we had dressed up….
Aside from the time I was given a can of chickpeas from a nearby student flat, I usually came home from trick-or-treating on Halloween with a decent stash of goodies. But most of all, I loved coming home with a toffee apple or two. They were my absolute favourite. And as Halloween is just around the corner, I wanted to honour the child in me and create a toffee-apple inspired dessert.
These vegan toffee apple donuts are perfect for Halloween
I had a quick look online and noted that there were already plenty of “toffee apple” recipes out there. So I wanted to do something a little different. As I was reminiscing about past Halloweens, I remembered that “donuts on a string” game we used to play at our school parties (did anyone else do that?!). That gave me the inspiration to combine these two desserts to create some vegan toffee apple donuts. The base is very similar to my vegan Biscoff donuts, as those were flavoured with cinnamon too. But the apple pieces and toffee sauce takes these donuts to a whole new level. I love the combination of the sweet, sticky-toffee frosting on the fluffy, cake-y donuts. Yum!

Vegan Toffee Apple Donuts
The classic flavours of a toffee apple combined with some fall-inspired cinnamon donuts. A real Halloween treat!
- For the donut batter:
- 200g Plain flour
- 1 Teaspoon Baking powder
- 1 Teaspoon Cinnamon
- 150g Sugar
- 60g Vegan butter
- 200ml Unsweetened soy milk (or other plant-based milk)
- 2 Tablespoons Chia seeds mixed with 6 tablespoons water
- 3-4 Green apples, peeled and grated
- 1 Teaspoon Lemon juice
- 1 Teaspoon Vanilla essence
- For the topping:
- 100g Brown sugar
- 60g Vegan butter
- 2 Tablespoons full fat coconut milk
- A few apple slices to decorate (optional)
Set your oven to 180°C/Gas mark 4 and prepare two 6-hole donut pans.
Mix the flour, baking powder, cinnamon and sugar together in a bowl.
Melt the vegan butter and add it to the bowl along with the rest of the donut ingredients. Mix well.
Pour the mixture into the donut pan holes and bake for 17 minutes until golden brown. Allow to cool completely.
Prepare the sticky toffee topping by placing the brown sugar, vegan butter and coconut milk in a small pan. Place over a high heat and stir continuously until it forms a slightly thick sauce (be careful not to overdo it). Allow the sauce to cool for 5 minutes.
Using a knife, gently spread the topping over the donuts. Top with apple slices if desired.
