How to make a Vegan Yule Log

Prepare the batter by mixing flour, cocoa powder, sugar, baking soda, xanthan gum, soy milk, vanilla and vegan margarine.

Pour it into a lined swiss roll tin and spread it out evenly. Bake for  12 minutes.

Carefully tip it onto a dishcloth and dust with cocoa powder. Cut off any uneven edges.

Very gently roll the cake up with the dishcloth inside. Leave to cool for 90 minutes.

Carefully unroll the cooled cake, fill with vegan buttercream then gently roll it back up.

Pipe vegan ganache over the yule log in lines.

Dust with icing sugar, cut into slices and enjoy!
