This vegan coffee cake is sweet and moist with a subtle coffee flavour, and is topped with a deliciously fragrant buttercream.

Step 1:

Mix instant coffee and boiling water together and leave to cool completely.

Step 2:

In a large bowl, mix together flour, baking soda and sugar. Add in vegan buttermilk, the cold coffee, oil and vanilla extract. Mix well.

Step 3:

Transfer the coffee cake batter into two lined cake tins.

Step 4:

Bake at 180°C for 15-18 minutes.

Step 5:

Sandwich the cakes together with homemade coffee buttercream then add some more on top.
