Vegan Gluten-Free Lemon Drizzle Cake

This vegan gluten-free lemon drizzle cake is moist, flavourful and super easy to make. It’s topped with a lemon-sugar drizzle and a thin layer of zesty icing.

Step 1:

Cream vegan margarine and caster sugar together in a bowl.

Step 2:

Add flour, baking soda,  soy milk and lemon juice. Mix well.

Step 3:

Add lemon zest then transfer to an 8x10 cake tin.

Step 4:

Bake at 180°C for 30-35 mins. Add lemon sugar drizzle while the cake is still hot.

Step 5:

Add the lemon icing on top and spread it out evenly.

Step 6:

Top with extra lemon zest, cut into slices and enjoy!
