Easy vegan lebkuchen cookies covered in a lemon glaze. These are traditional German Christmas cookies, similar to gingerbread, but are soft and cakey in texture.

Step 1:

In a large bowl, mix together brown sugar, vegan butter, agave nectar, vanilla extract and soy milk.

Step 2:

In a separate bowl, mix together plain flour, ground almonds, cocoa powder, baking powder and spices. Mix into the wet mixture to make a super sticky dough. Chill 30 mins.

Step 3:

Roll the dough into balls and slightly faltten into discs that are around 1+1/2-inches thick. Cut into shapes if desired.

Step 4:

Bake for 18-20 mins at 170°C.
