Vegan Mint  Chocolate Brownies

These vegan mint brownies are gooey, fudgy and slightly chewy, with pieces of dairy-free ‘After Eights’ throughout.

Step 1:

Mix plain flour, cocoa powder, baking powder and caster sugar together in a bowl.

Step 2:

Add melted vegan margarine, soy milk and peppermint extract. Mix well.

Step 3:

Add chopped vegan thin mints to the batter then transfer to a lined baking tin.

Step 4:

Bake for 22 minutes at 180°C. Leave to set fully.

Step 5:

Drizzle homemade mint icing over the top of the brownies.
