These vegan white chocolate raspberry cookies are soft, chewy and have slightly crispy edges.

Step 1:

Mix flax seeds and water to create a flax 'egg'.

In a large bowl, mix together vegan margarine, brown sugar, caster sugar and vanilla extract. Then stir in the flax 'egg'.

Add self-raising flour then press the mixture together into a ball of dough.

Add vegan white chocolate chips and freeze dried raspberry pieces.

Divide the dough into 12 balls then flatten slightly onto a baking tray.
