Step 1:

Mix self-raising flour, cocoa powder, baking soda, xanthan gum and caster sugar together in a bowl.

Step 2:

Add melted vegan margarine, soy milk and vanilla extract. Mix well to make a thick batter.

Step 3:

Transfer the mixture to a 10 x 14-inch tray and spread out evenly.

Bake for 12 minutes then leave for 5 minutes to cool slightly.

Gently tip cake out onto a dishcloth and cut off any rough edges.

Sprinkle a small amount of cocoa powder over the cake and gently roll it up with the dishcloth, while the cake is still warm. Leave to cool.

Once cool, gently unroll the cake, fill with vegan buttercream then re-roll.

Pipe the homemade chocolate ganache onto the rolled cake.
