VEGAN TOFFEE APPLE DONUTS

The classic flavours of a toffee apple combined with some fall-inspired cinnamon donuts. A real Halloween treat!

Ingredients

For the donut batter:

  • 200 g Plain flour
  • 1 Teaspoon Baking powder
  • 1 Teaspoon Cinnamon
  • 150 g Sugar
  • 60 g Vegan butter
  • 200 ml Unsweetened soy milk or other plant-based milk
  • 2 Tablespoons Chia seeds mixed with 6 tablespoons water
  • 3-4 Green apples peeled and grated
  • 1 Teaspoon Lemon juice
  • 1 Teaspoon Vanilla essence

For the topping:

  • 100 g Brown sugar
  • 60 g Vegan butter
  • 2 Tablespoons full fat coconut milk
  • A few apple slices to decorate optional

Instructions

  1. Set your oven to 180°C/Gas mark 4 and prepare two 6-hole donut pans.
  2. Mix the flour, baking powder, cinnamon and sugar together in a bowl.
  3. Melt the vegan butter and add it to the bowl along with the rest of the donut ingredients. Mix well.
  4. Pour the mixture into the donut pan holes and bake for 17 minutes until golden brown. Allow to cool completely.
  5. Prepare the sticky toffee topping by placing the brown sugar, vegan butter and coconut milk in a small pan. Place over a high heat and stir continuously until it forms a slightly thick sauce (be careful not to overdo it). Allow the sauce to cool for 5 minutes.
  6. Using a knife, gently spread the topping over the donuts. Top with apple slices if desired.
