EASY VEGAN BANANA BREAD RECIPE

Ingredients

  • 3 Tablespoons Chia seeds
  • 85 g Vegan butter
  • 200 g Brown sugar
  • 1 Teaspoon Vanilla
  • 5 Ripe bananas mashed to a puree
  • 200 g Plain flour
  • 2 Teaspoons cinnamon
  • 80 g Chopped walnuts optional
  • Agave nectar to drizzle, optional

Instructions

  1. Preheat oven to 180°C/gas 4 and line a loaf tin.
  2. Mix chia seeds with 9 tablespoons water and set aside to thicken.
  3. In a large bowl, mix together the butter, sugar and vanilla to form a paste.
  4. Stir in the mashed bananas, flour, cinnamon and chia seed mixture until well combined.
  5. Add in the chopped walnuts, leaving a few to decorate with if desired.
  6. Bake for 1 hour 15 minutes and leave to cool.
  7. Take the banana bread out of the tin and decorate with remaining walnuts. Drizzle with agave nectar if desired.
