Ingredients

  • 175 g Self-raising flour
  • ½ Teaspoon Baking powder
  • 70 g Caster sugar
  • 50 g Soft light brown sugar
  • 2 Teaspoons Cinnamon
  • 80 g Vegan margarine, melted
  • 135 ml Unsweetened soy milk
  • 1 Teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 180°C/350°F (or 160°C/325°F if you're using a fan or convection oven).

  2. Line a muffin tray with 6 muffin liners.

  3. In a large bowl, mix together the flour, baking powder, caster sugar, brown sugar and cinnamon.

  4. Add the melted margarine, soy milk and vanilla extract to the bowl and mix well until you have a smooth batter.

  5. Divide the batter equally between your 6 liners and bake for around 20 minutes, until a toothpick through the middle comes out clean.

  • Store in an airtight container in a cool, dry place for up to 3 days.
