CHOCOLATE COCONUT VEGAN BOUNTY BARS RECIPE

A vegan remake of the classic, coconut chocolate Bounty bars. No bake, gluten free, low carb and refined sugar free!

Ingredients

  • 1 + ⅓ Cups Fine grade unsweetened desiccated coconut (160g)
  • 4 Tablespoons Semi-solid extra virgin coconut oil
  • 2 Tablespoons Coconut milk
  • 2 Tablespoons Agave nectar
  • 1 Teaspoon vanilla essence (optional)
  • 7 oz Dairy-free chocolate (200g)

Instructions

  1. Mix all ingredients except the chocolate in a bowl. Use your hands to form 6 small patties.
  2. Shape the patties into bars and freeze for 15 minutes.
  3. Melt the chocolate over a low heat and allow it to cool for a few minutes.
  4. Dip the coconut bars into the chocolate, one at a time, and place on a cooling rack (make sure there's parchment paper underneath to catch any mess).
  5. Refrigerate the bars for 1 hour or freeze for 15 minutes to set the chocolate.
  6. Enjoy immediately or store in the fridge for up to 7 days.
