Vegan caramel (5 Minute Recipe)

Ingredients

  • 2 Tablespoons Cornflour (cornstarch)
  • 250 ml Unsweetened soy milk (1 cup)
  • 2 Tablespoons Vegan margarine (the spreadable kind, not the block)
  • 80 g Soft light brown sugar (⅓ cup + 1 tablespoon)
  • 3 Teaspoons Vanilla extract

Instructions

  1. Mix the cornflour with 2 tablespoons of the soy milk until smooth. Add that mixture to the rest of the soy milk and mix well.

  2. Melt the margarine in a small saucepan over a very low heat. Once melted, add the rest of the ingredients to the pan, including the soy milk, and turn the heat up high.

  3. Stir continuously until the caramel becomes thick. Remove from the heat and allow it to cool.

Recipe Notes

  • Store in an airtight container in the fridge for up to 5 days. Mix well before use.
