When you hear the word biscuit, do you think about the crunchy cookies type or the soft, scone-like type? In the UK, biscuit is the word we use for any type of cookie that isn’t soft. Anything with a good ‘snap’ can be considered a biscuit!
When I first went vegan, I spent a lot of time looking for biscuit recipes. There were a few accidentally vegan biscuits in the supermarkets but I always like to try baking homemade versions. But whenever I searched for recipes, I was always met with recipes for the US-style of biscuit. While I’m sure they are lovely, they are just totally not the same thing!
