Do you ever dream about the day when all take-away food is vegan friendly?
Since going vegan, I’ve missed nothing more than my old favourite take-away desserts. In particular, Pizza Hut’s warm cookie dough. It was always my first choice of dessert whenever I ate out.
I’d accepted the fact it was just one of those things I’d have to learn to live without. Until recently… I discovered I could make a vegan replica.
The idea first came to me when I was making some shop-bought cookie mix the other day. (Side note: If you didn’t know, most boxed cake and cookie mixes do not contain any animal products. To make them vegan friendly, you just need to use a substitute for the extras that they tell you to add.)
As the cookies baked, my kitchen filled with a wonderful smell that I knew all too well. It smelled exactly like my old friend, Pizza Hut cookie dough. I removed the cookies slightly earlier than the box advised and I was not disappointed. The result was warm, gooey, mini versions of cookie dough. That gave me the idea to try to create this chocolatey, gooey vegan Pizza Hut cookie dough recipe.

It took several attempts to get it right but the recipe I present to you today is nothing less than delicious. The edges are chewy and crispy and the inside is soft and gooey. It tastes just as delicious as I remember Pizza Hut’s cookie dough being.
It’s best served with ice cream and drizzled with melted chocolate, and this vegan Pizza Hut cookie dough makes the perfect sharing dessert for after dinner. I say sharing because it tastes the best when it’s still warm, fresh from the oven. So unless you have a HUGE sweet tooth, make sure you’ve got a friend or two to help you eat it!
VEGAN PIZZA HUT COOKIE DOUGH RECIPE
- 1 Chia egg 1 Tablespoon chia seeds + 3 tablespoons water
- 60 g Caster sugar
- 125 g Brown sugar
- 50 g Vegan butter melted
- 1 Teaspoon vanilla extract
- 115 g Plain flour
- 1/2 Teaspoon baking powder
- 80 g Dark Chocolate chunks
To serve (optional)
- Vegan vanilla ice cream
- Few squares of melted dark chocolate to drizzle
Preheat oven to 180°C/Gas 4 and grease a 9" cake pan.
Prepare your chia egg and set aside to thicken.
In a large bowl, mix together the caster sugar, brown sugar and melted butter to form a smooth paste. Add the vanilla and chia egg.
Add the flour and baking powder in and gently combine to form a sticky dough.
Fold in the chocolate chunks and refrigerate the dough for 25 minutes.
Place the chilled dough into the center of the cake pan and flatten slightly (don't worry about pressing all the way to the edges).
Bake for around 25 minutes.
Serve with ice cream and drizzle with chocolate.
Best served warm, fresh from the oven
