A classic vegan Mother’s Day dessert! Two layers of vanilla sponge cake, filled with dairy-free buttercream icing and strawberry jam. Add a dusting of icing sugar on top for an extra special touch.
3. Lemon Drizzle Loaf
An easy, zesty loaf cake that’s great for dessert. The cake itself contains lemon zest, plus it has a lemon-sugar drizzle on top, so it’s bursting with citrusy flavour.
4. Vanilla Cheesecake
A no-bake, dairy-free cheesecake with a delicious Digestive biscuit base. Creamy, flavourful and made without cashews!
5. Coffee Cake
Two layers of vegan coffee sponge cake sandwiched together with creamy coffee flavoured buttercream.

Creamy, melt-in-your-mouth fudge that you can make without condensed milk of any kind. There’s no baking required either- just heat it in a pan, leave it to set and enjoy.

25 Vegan Mother’s Day Desserts + Strawberry Cookies Recipe
Chewy vegan cookies with fresh strawberry pieces and white chocolate chips throughout.
Ingredients
Strawberry Cookies Recipe
- 1 Tablespoon Ground flax seeds
- 200 g Vegan margarine
- 150 g Caster sugar
- 100 g Soft light brown sugar
- 1 Teaspoon Vanilla extract (or use strawberry extract for extra flavour)
- 320 g Self-raising flour
- 2-3 Fresh strawberries, cut into small pieces
- 30 g Vegan white chocolate chips (optional, I used Moo-Free)
Instructions

Preheat oven to 200°C (180°C for fan oven) and line a cookie tray.

Make a flax 'egg' by mixing the flax seeds with 1 tablespoon of water and set aside for 5 minutes to thicken.

Mix together the margarine, caster sugar and brown sugar in a large bowl then stir in the flax egg and vanilla extract.

Add in all of the self-raising flour and mix together. Use your hands to press it into a ball of cookie dough.

Divide the dough into 12 balls and gently flatten them to 1/2-inch thick discs. Place them on the baking tray, leaving an inch or two of space between them to allow for spreading.

Gently press some strawberry pieces and white chocolate chips onto the tops of the cookies.

Bake for 12 minutes and let them cool completely before removing from the tray.
Recipe Notes
- Store in an airtight contain at room temperature for 24-48 hours.
